The Ultimate Moroccan Mint Tea Recipe

Moroccan mint tea is more than just a drink; it’s a symbol of hospitality, culture, and tradition. Step-by-Step Instructions

1. Keep the « spirit

Place the Gunpowder tea in a teapot and add a small amount of boiling water. Let it steep for **1 minute**, then keep this first infusion to preserve the essence or « spirit » of the tea.  

2. Discard the second rinse

Add boiling water to the tea again to rinse it, but this time, **discard the water** after 20–30 seconds. This step removes bitterness and impurities. 

3. Assemble the tea

Add the following to the teapot:  

   – The first infusion you kept (the « spirit »).  

   – The sugar.  

   – The remaining boiling water. 

4. Heat on medium flame:

Place the teapot on medium heat and let it simmer gently for **5 minutes**. This step enhances the flavors and helps the sugar dissolve completely.  

5. Add the mint

After removing the teapot from the heat, add the fresh mint. Let it infuse for a few minutes.  

 6. Aerate the tea

Pour the tea into a glass and then pour it back into the teapot. Repeat this process **3 to 5 times** to mix the flavors well and create a frothy texture.  

7. Serve

Place a few mint leaves at the bottom of each glass. Pour the tea from a height into the glasses to create a nice foam, and serve hot.
